1. Heat 1-tablespoon oil in wok over medium high heat.
2. Stir-fry chicken, beef and shrimp 2 minutes. Set aside.
3. Wipe wok clean.
4. Add remaining oil to wok. Stir-fry eggs.
5. Add meats, green peas, and scallions. Stir-fry 30 seconds.
6. Add cooked rice, salt and pepper. Cook until heated through.
7. Serve immediately.
