Yangzhou Fried Rice Recipe

Yangzhou fried rice combines chicken, beef and shrimp with green peas, green onions, and egg. Seasoned with salt and pepper. This is a great dish to serve as a one pot meal.
Ingredients -
 

1 cup shredded Chicken
1 cup shredded Beef
4 ounces peeled and deveined Shrimp
¼ cup Green Peas
1 Scallion chopped
3 cups cold cooked Long Grain White Rice
2 Eggs, beaten
2 tablespoons Peanut Oil
1 1/2 teaspoon Sea Salt
1 teaspoon Ground Black Pepper

 
Preparation:
 

1. Heat 1-tablespoon oil in wok over medium high heat.

2. Stir-fry chicken, beef and shrimp 2 minutes. Set aside.

3. Wipe wok clean.

4. Add remaining oil to wok. Stir-fry eggs.

5. Add meats, green peas, and scallions. Stir-fry 30 seconds.

6. Add cooked rice, salt and pepper. Cook until heated through.

7. Serve immediately.

This amazing three meat fried rice can be easily altered to include your favorite meats. Yangzhou fried rice is great with shredded barbecued or roasted pork, as well as chopped ham.

Long Grain White Rice

Rice is best when left to cool in the refrigerator overnight. If you are pressed for time, spread rice on a cookie sheet and place in the refrigerator for one half hour after cooking. Use your hands and a small amount of peanut oil to de-clump rice and prep for stir-frying.
