Waimea Fried Rice

Long grain brown rice stir fried with celery, red bell pepper, and pineapple flavored with sesame oil, lemon grass, jalapeno pepper, garlic, ginger, mint, cilantro, fish sauce, vinegar, and sea salt. Waimea fried rice is a great dish to accompany grilled fish and seafood.
Ingredients -
 

1 cup Long-Grain Brown Rice, cooked and chilled
1 tablespoon Dark Sesame Oil
3 tablespoons thinly sliced Lemon Grass
1 Jalapeno Pepper, seeded and finely chopped
3 cloves Garlic, minced
4 teaspoons grated peeled Fresh Ginger
1/2 cup diced Celery
1/3 cup diced Red Bell Pepper
1 cup chopped Pineapple
1 tablespoon finely chopped Fresh Mint
1 tablespoon minced Fresh Cilantro
1 tablespoon Fish Sauce
1 teaspoon Rice Vinegar
1/4 teaspoon Sea Salt

 
Preparation:
 

1. Heat oil in wok over medium high heat.

2. Add lemon grass, jalapeno pepper, and garlic. Stir-fry 30 seconds.

3. Add ginger, celery, and bell pepper. Stir-fry 30 seconds.

4. Add rice and cook until heated through.

5. Add pineapple, mint, cilantro, fish sauce, rice vinegar and salt. Stir to combine.

6. Remove from heat. Place fried rice on serving platter and serve.

Lemon Grass

Lemon grass adds a nice citrus flavor to this dish. While lemon grass can be in dried or powder form, the recipe calls for fresh lemon grass, thinly sliced.
