Vegetable Fried Rice

Chinese long grain white rice stir-fried with egg, white onion, mushrooms, carrot, lettuce, green onions, flavored with garlic, ginger, soy sauce, and seasoned with salt and pepper. Perfect fried rice to serve with a spicy Chinese entree.
Ingredients -
 

1 teaspoon Peanut Oil
1 Large Egg, beaten
1 chopped medium White Onion
2 cloves Garlic, crushed
1 teaspoon Ground Ginger
7 sliced Fresh Mushrooms
1 thinly sliced Carrot
Soy Sauce, to taste
3 cups Long-Grain White Rice, cooked and chilled overnight
1 cup Shredded Iceberg Lettuce
3 sliced Green Onions
Coarse Salt, to taste
Fresh Ground Black Pepper, to taste

 
Preparation:
 

1. Heat wok over medium high heat. Add peanut oil.

2. Add egg. Cook flat like pancake. Remove from wok, cut into thin strips.

3. Saute onion, garlic, ginger, mushrooms, and carrot.

4. Add rice to wok. Stir-fry 3 minutes, or until cooked through.

5. Add egg, lettuce, and green onions. Stir-fry 1 minute.

6. Serve hot.

To make your vegetable fried rice spicy, and red pepper flakes to the wok when sauteing the onion, garlic, ginger mushroom and carrots.

Cooling Rice

If you cant wait overnight to chill your cooked rice, spread the rice on a large cookie sheet and place in the refrigerator for half an hour. Remove the rice from the cold and place in a bowl. Add 2 tablespoons of peanut oil to the rice, and using your hands break up the sticky rice and coat it with oil.
