Thai Fried Rice

Thai fried rice is a hearty one pot meal. Long grain white rice stir-fried with pork, chicken, shrimp, egg, and pineapple, flavored and seasoned with garlic, sugar, fish sauce, green onions, and white pepper. Serve as a standalone dish, or with traditional thai entrees.
Ingredients -
 

1/2 cup Peanut Oil
2 cloves Garlic, finely sliced
1/3 cup Chicken, finely chopped
1/3 cup Pork, finely chopped
3/4 pound Shrimp, peeled and devained
4 large Eggs, beaten
12 cups Cooked Long Grain White Rice, chilled overnight
1 cup Pineapple, diced
2 tablespoons Sugar
6 tablespoons Nam Pla Prik (Hot Fish Sauce)
1 cup Green onions, cut 1" pieces
2 teaspoons Ground White Pepper

 
Preparation:
 

1. Heat oil in wok over Medium heat.

2. Add garlic. Stir-fry until golden brown.

3. Increase heat. Add chicken, pork, and shrimp and stir-fry until almost cooked through. Push to the side.

4. Add egg and scramble.

5. Add rice and stir-fry 1 minute, combining everything in wok.

6. Add pineapple. Stir-fry 1 minute.

7. Add sugar, Nam Pla, green onions, and white pepper. Stir-fry 2 minutes.

8. Serve hot.

Fried Rice Tips -
Nam Pla Prik

Nam Pla Prik can be found in most supermarkets and asian markets. You can make your own by combining ¼ cup fish sauce, 5 tablespoon lime juice, 2 cloves minced garlic, and 5 thinly sliced thai red or green chiles.

Pineapple

Fresh or canned pineapple both work well in this Thai fried rice recipe. Be sure to drain off as much of the pineapple juice as possible.
