Special Fried Rice

A classic chinese restaurant favorite, our special fried rice combines chinese barbecued pork with prawns, egg, bell pepper, scallions, fresh ginger and garlic. Special fried rice is seasoned with oyster and soy sauces, sesame oil, and fresh ground black pepper.
Ingredients -
 
2 tablespoons Peanut Oil
1 tablespoon chopped Fresh Ginger Root
2 clove Garlic, chopped
2 Scallions, chopped
½ cup Chinese Barbecued Pork, finely chopped
½ cup uncooked Prawns, shelled and deveined
½ cup Red Bell Pepper, diced
½ cup Frozen Peas, boiled and drained
2 Eggs, scrambled
10 cups Steamed Cooked Rice, chilled overnight
1 tablespoon Oyster Sauce
2 tablespoons Light Soy Sauce
1 teaspoon Sesame Oil
1/2 teaspoon Fresh Ground Black Pepper
 
Preparation:
 

1. Heat peanut oil in wok over medium heat.

2. Add ginger, garlic and scallions. Stir-fry 30 seconds.

3. Add Chinese barbecued pork, and uncooked prawns, Stir-fry 2 minutes.

4. Add cooked peas, red bell pepper, and scrambled eggs. Stir-fry 30 seconds.

5. Add cooked rice, Stir-fry 1 minute, combining everything well.

6. Add oyster sauce, soy sauce, sesame oil, and fresh ground black pepper.

7. Serve hot.

Fried Rice Tips -
Chinese Barbecued Pork

In a small pan, stir together 1/4 cup soy sauce, 2 tablespoons honey, 2 tablespoons sugar, 2 tablespoons dry sherry, 1 teaspoon salt, 1 teaspoon Chinese five-spice, and 1 tablespoon crushed fresh ginger. Heat for 1 minute, stirring constantly to dissolve sugar, remove from heat, let cool. Place 3 pounds lean boneless pork, cut into 1-inch-thick slices, in a large zip-lock plastic bag. Add marinade, seal bag, refrigerate, turning occasionally, overnight. Remove pork from marinade. Bake in 350 F oven, 1 hour 15 minutes, turning and basting occasionally.
