Shrimp Fried Rice Recipe

Chinese style shrimp and ham fried rice. Long grain white rice stir-fried with shrimp, white onion, ham, green peas and flavored with soy sauce, oyster sauce, salt and pepper. Shrimp fried rice is garnished with egg strips and finely diced scallions.
Ingredients -
 

4 cups cold Cooked Long Grain White Rice
4 ounces Frozen Uncooked Shrimp, shelled and deveined
1 medium White Onion, diced
4 ounces Cooked Ham, diced
2 Large Eggs, lightly beaten
1/2 cup Green Peas
1 Green Onion, finely diced
1 tablespoon Soy Sauce
1 tablespoon Oyster Sauce
Sea Salt, to taste
Fresh Ground Black Pepper, to taste
Cornstarch, mixed with water
Peanut or Canola Oil for stir-frying

 
Preparation:
 

1. Heat wok over medium high heat.

2. Add 1-tablespoon oil. Add eggs to wok, cook, turn once and remove. Cut into thin strips and set aside.

3. Wipe wok clean.

4. Add 1-tablespoon oil.

5. Stir-fry white onion, green peas and ham 1 minute. Remove from wok.

6. Stir-fry shrimp 1 minute. Remove from wok.

7. Add 2 tablespoons oil to wok.

8. Stir-fry rice 3 minutes.

9. Stir in soy sauce and oyster sauce. Season with salt and pepper.

10. Return other ingredients except egg to wok. Heat through.

11. Serve, rice hot, garnish with egg strips and green onion

Substitute your favorite variety of fresh shrimp and alter the stir-frying time depending on the size of the shrimp you choose.

Oyster Sauce

You can omit the oyster sauce if it is not available, or you do not wish to use it. It adds only a tiny amount of flavor.
