Shiitake Fried Rice

Shiitake fried rice has amazing color, flavor and aroma. The dish should be served immediately after preparation. Shiitake fried rice goes especially well with a beef entree.
Ingredients -
 
1 cup Basmati Rice
1 1/2 cup Water
1 tablespoon Sesame Oil
2 teaspoons Fresh Ginger, minced
12 Shiitake Mushrooms, medium, de-stemmed
3 Green Onions, chopped
1 teaspoon Garlic, minced
2 Eggs, beaten
3 ounces Tamari, or to taste
 
Preparation:
 
1. Prepare Basmati Rice. See Cooking Tips.

2. Add 1/2 tablespoons oil to hot pan, scramble eggs. Remove from pan.

3. Saute ginger, mushrooms, scallions, and garlic in remaining oil.

4. Add rice, tamari, and eggs. Heat through.

5. Serve immediately.

The Shiitake Fried Rice recipe makes 3 servings.




Fried Rice Tips -
Basmati Rice

For one cup of Basmati rice, use 1 1/3 cups water to cook.

Prep to cook - Rinse 1 cup rice several times, get rid of water. Soak rice in new water for about 15 minutes before cooking. Soaking will allow the rice to expand. Drain water off.

Bring 1 1/3 cups water, a pinch of salt and a dash of oil to boil. Add rinsed and soaked rice to boiling water. Cook 7-8 minutes. Remove from heat and allow rice to continue to cook in its own steam.

For Shiitake Fried Rice Recipe, Bamati rice does not need to cool prior to stir-frying.

Shiitake Fried Rice recipe calls for shiitake mushrooms. Use fresh where available, otherwise re-hydrate dried shiitake's, and pat dry prior to stir-frying.
