Mixed Vegetable Fried Rice

Broccoli florets, carrots, zucchini, sweet onion, and bell pepper stir fried with brown rice and seasoned with garlic, dark sesame seed oil, soy sauce and Szechwan hot chili oil. Mixed vegetable fried rice is garnished with fresh cilantro and sesame seeds.
Ingredients -
 

1/2 pound Broccoli Florets
2 medium Carrots, diagonally sliced
1 medium size Zucchini, diagonally sliced
2 tablespoons Vegetable Oil
2 tablespoons Dark Sesame Oil
1 small Sweet Onion, halved and sliced
1 small Red Bell Pepper, cut into thin strips
1 tablespoon minced Garlic
1/3 cup Soy Sauce
Szechwan Hot Chili Oil
2 cup cooked Brown Rice
1/4 cup Toasted Sesame Seeds
1 tablespoon chopped Fresh Cilantro

 
Preparation:
 

1. Steam broccoli, carrots, and zucchini until crisp-tender. Set aside.

2. In a wok, heat peanut oil and dark sesame oil over low heat.

3. Add sweet onion and stir-fry until tender.

4. Add bell pepper and stir-fry 1 minute.

5. Add minced garlic, soy sauce, and a few drops hot chili oil.

6. Add reserved vegetables and rice to wok.

7. Increase heat to medium. Stir-fry 3 minutes.

8. Remove vegetable fried rice to serving platter.

9. Garnish rice with sesame seeds and cilantro.

Fried Rice Tips -
Toasted Sesame Seeds

Toast sesame seeds in a heavy skillet over medium heat on the stove top. Stir sesame seeds until golden. Remove from heat and pour into shallow bowl to cool.

Do not be tempted to substitute light sesame seed oil for the dark.
