House Special Fried Rice

House special fried rice is a mix of stir fried meats and vegetables and long grain white rice. A favorite in Chinese restaurants around the globe, house special fried rice is a one dish meal. Serve with your favorite chinese beer or rice wine.
Ingredients -
 

2 tablespoons Peanut Oil
1/2 cup White Onion, diced
1/2 cup Bean Sprouts
1/4 cup Carrots, diced
1/4 cup Frozen Baby Peas
1/4 cup Scallions, chopped
1 teaspoon minced Garlic
3 cups cooked Long Grain White Rice
1/2 cup stir fried Beef, sliced
1/2 cup stir fried Chicken, sliced
1/2 cup steamed Shrimp
3 Eggs, scrambled
1 teaspoon Coarse Salt
1 1/2 teaspoons Sugar
1 tablespoon Light Soy Sauce
2 teaspoons Dark Soy Sauce
1/4 teaspoon White Pepper

 
Preparation:
 
1. Heat peanut oil in wok over medium-high heat.

2. Add onions, bean sprouts, carrots, frozen baby peas, scallions, and garlic. Stir-fry 3-5 minutes, until vegetables are crisp tender.

3. Add cooked rice, eggs, light sauce, dark soy sauce, beef, chicken, and shrimp. Stir-fry until mixed well and cooked through.

4. Stir in sugar, salt, and pepper. Serve.

Fried Rice Tips -
Steamed Shrimp

Add a few tablespoons of water to a very hot wok. Add shrimp to boiling water and cover. Allow shrimp to steam several minutes until shrimp are opaque and cooked through.


Fried Rice Tips -
White Pepper

Black pepper has a hotter flavor the white pepper, but the difference in this recipe would be negligible. If you do not have white pepper in your pantry, substitute with a 1/4 teaspoon of fresh ground black pepper.
