Fried Rice Recipe

Nice and easy stir-fried rice like you might find served with your meal in a Chinese restaurant. Long grain white rice stir-fried with egg, ham, white onion and seasoned with sugar, soy sauce and salt.
Ingredients -
 

4 1/2 cups Long Grain White Rice, cooked, chilled
2 Eggs, beaten
1/2 cup White Onion, diced
1/4 cup cooked Ham, finely diced
1 1/2 tablespoon Peanut or Canola Oil
1/2 teaspoon Sugar
2 tablespoon Soy Sauce
1/2 teaspoon Sea Salt

 
Preparation:
 

1. Heat wok over medium-high heat.

2. Add oil to wok. Heat to smoking point.

3. Add egg and scramble. Remove from wok.

4. Stir-fry onion and ham until onion is translucent.

5. Add rice to wok, Stir-fry 3 minutes.

6. Add egg, sugar, soy sauce, and salt

7. Stir-fry until mixed well and heated through.

Fried Rice Tips -
Sticky Rice

For best results use rice that has been chilled for at least 24 hours. When ready to stir-fry, add 2 tablespoons of oil to the rice and work your hands through the grains to separate the grains.

A good substitute here is really crispy bacon. 2 slices of your favorite variety should yield 1/4 cup of crumbled bacon.
