Crab Fried Rice

Chinese long grain white white rice stir fried with crabmeat, onion, scallions, garlic, sugar, salt, egg and fresh cilantro. Served hot with wedges of lime. Crab fried rice goes well with seafood stir-fry entrees, and grilled fish.
Ingredients -
 

4 cups, Long Grain White Rice, cooked and chilled
3 tablespoons Vegetable or Peanut Oil
2 medium White Onions, cut into wedges
3 cloves Garlic, chopped
1/2 tablespoon Granulated Sugar
2 teaspoons Coarse Salt
1 Large Egg, beaten
1/4 pound cooked Crabmeat
3 Scallions, chopped
1 tablespoon chopped Fresh Cilantro
2 Fresh Limes, cut in wedges

 
Preparation:
 
1. Heat wok over medium heat until hot. Add peanut oil.

2. Stir-fry onions and garlic until onions are soft.

3. Add rice, granulated sugar, and coarse salt. Stir-fry 5 minutes.

4. Add egg to rice mixture. Stir-fry until egg is scrambled and combined.

5. Increase heat to medium-high.

6. Add crabmeat, scallions, and cilantro. Stir-fry 3-4 minutes, until heated through.

7. Serve hot. Garnish with lime wedges.

Fried Rice Tips -
Crabmeat

Fresh crabmeat is the best choice for this recipe. Be sure crab is free of any shells prior to stir-frying. If using frozen crabmeat, be sure it has been thawed and excess water squeezed out.
