Chinese Shrimp Fried Rice

Chinese shrimp fried rice prepared on the stove top. Rice combined with egg omelet and fresh vegetables, seasoned lightly and stir fried quickly in minutes. This is a great fried rice to eat as a one pot meal or to build a seafood meal around.
Ingredients -
 
3 pounds Medium Shrimp, rinsed, peeled and deveined
1 tablespoon Unsalted Butter
2 Eggs, beaten
2 tablespoons Milk
2 tablespoons Sesame Oil
1 cup finely diced Red or Spanish Onion
1/3 cup Sweet Sherry
1/4 tsp Fresh grated Ginger
2 cups Bean Sprouts
2 cups cooked Long Grain White Rice
1/3 cup Light Soy Sauce
6 Green Onions, chopped
Vegetable Cooking Spray
Salt, to taste
Fresh Ground Black Pepper, to taste
 
Preparation:
 
1. Spray large skillet with cooking spray and melt butter over medium high heat.

2. Add milk and salt and pepper to eggs. Whisk until fluffy.

3. Pour egg mixture into hot skillet.

4. Cook until eggs are set. Remove omelet from skillet and cut into small pieces.

5. Reduce heat to medium. Reheat skillet and add sesame oil.

6. Cook onions a few minutes until soft and transparent.

7. Add shrimp and cook about 3 minutes until pink and cooked through.

8. Reduce heat to low. Add sherry, ginger, omelet pieces and bean sprouts.

9. Cook additional 2 minutes. Stir in rice.

10. Add soy sauce and stir mixture so soy sauce coats rice.

11. Add green onions and continue to stir.

12. Serve immediately.

For added flavor, serve with oyster or hoisin sauce on the side.

When cooking rice in a skillet, use a pot with a heavy bottom, preferably copper. The finished rice will have a thinner crust.

Rinse long grain rice several times in cold water, until the rinse water runs clear. Rinsing helps remove any starch and residues, resulting in less sticky rice.
