Chinese Fried Rice

Chinese fried rice is a hearty dish that is well suited to being a main entree. Add chinese soup and a vegetable stir-fry for a complete meal.
Ingredients -
 
6 tablespoons Peanut or Vegetable Oil
2 Eggs
1 teaspoon Salt
2 Green Onions, chopped
1/2 cup Fresh Shrimp, shelled, deveined and diced
4 cups cold, Cooked Rice (long-grain Chinese white rice)
1/2 cup cooked Peas
1/4 cup canned diced Bamboo Shoots
1/4 cup diced cooked Ham
1/2 cup diced cooked Chicken
1/2 cup diced cooked Pork, preferably Chinese barbecued pork (Char Sui)
2 tablespoons Soy Sauce
 
Preparation:
 
1. Heat 2 tablespoons of the oil.

2. Carefully crack eggs and lightly beat. Add 1/2 teaspoon salt and scramble in oil. Remove eggs and set aside.

3. Heat remaining 4 tablespoons of oil.

4. Add green onions and shrimp and dash of salt. Cook until shrimp cooks through (pink).

5. Using your hands or wooden spoon break up cooked rice.

6. Add rice to shrimp. Stir until rice is heated and grains are separated.

7. Add all the rest of the ingredients, except soy sauce.

8. Stir until heated through and well mixed.

9. Sprinkle soy sauce over rice, and mix evenly.

10. Salt and pepper, to taste.

11. Garnish with additional chopped green onions, if desired.


This recipe makes 2 servings of Chicken Fried Rice.

Fried Rice Tips -
Preparation

Heat your wok for a minute or two prior to stir-frying. Drizzle oil along sides and bottom of wok to coat surfaces and heat oil faster.

Seasoned Oil

Season oil by placing ginger or garlic in hot wok briefly, being careful not to allow garlic or ginger to burn.

Keep it Moving

Always wait several seconds, when stir-frying meat, before turning so that it has a chance to properly brown. Meat should begin to change color. Meat will continue to cook after it is removed from the wok, so if the recipe calls for returning meat to the dish at the end of the recipe, its ok to remove meat just prior to it being cooked through.
