Chicken Fried Rice

Chicken fried rice makes a great one dish meal, or a fried rice side dish to a complete chinese meal. This chicken fried rice recipe gets a nice bite of flavor from the sesame oil sprinkled on at the end of the stir-fry.
Ingredients -
 
1 cup Cooked Rice
1 cup Water
2 Boneless, Skinless, Chicken Breast Halves
1/2 teaspoon Cornstarch
White Pepper, to taste
2 Eggs, slightly beaten
4 Green Onions, chopped
1 cup Bean Sprouts, rinsed and trimmed
1 tablespoon Peanut or Vegetable Oil
2 tablespoons Peanut or Vegetable Oil
1 1/2 tablespoon Soy Sauce
2 teaspoons Sesame Oil
 
Preparation:
 
1. Cut chicken into 1/4-inch pieces.

2. Combine chicken, cornstarch, and white pepper.

3. Set eggs, green onions, and bean sprouts aside in separate bowls.

4. Heat wok until 1 or 2 drops of water sizzle and dissipate when sprinkled in wok.

5. Coat sides of wok with 1 tablespoon oil.

6. Add eggs and scramble. Remove eggs from wok.

7. Coat sides of wok with 2 tablespoons oil.

8. Add chicken and stir-fry until cooked through.

9. Add rice and stir-fry for additional minute.

10. Add soy sauce and additional white pepper, to taste.

11. Add eggs, bean sprouts, then green onions, stir fry additional 30-45 seconds.

12. Sprinkle with sesame oil and serve.


This recipe makes 2 servings of Chicken Fried Rice.
Variations and Recipe Ideas:
This recipe is well suited for switching out the chicken with shrimp, pork, beef or larger crunchy vegetables.

Preparation

Make sure all prep work is done prior to stir-frying. Stir-frying goes fast, there's no time for chopping meat or vegetables.
