Caribbean Fried Rice

A main staple in Caribbean cuisine is rice. Caribbean fried rice is a wonderful mixture of light vegetables stir-fired with brown rice, and a mix of pineapple, red onion and cilantro added for island flavor.
Ingredients -
 
1/2 teaspoon Sesame Oil
1/4 cup diced Red Bell Pepper
1/4 cup sliced Mushrooms
2 tablespoons thawed Frozen Peas
2 tablespoons diced Red Onion
2 tablespoons diced Pineapple
1 tablespoon chopped Cilantro
3 1/2 cups cooked Brown Rice
1/4 cup Low-Salt Chicken Broth
1/4 cup Low-Sodium Soy Sauce
 
Preparation:
 
1. Over medium high heat, heat sesame oil in large non-stick skillet until hot, but not smoking. Do not allow oil to burn.

2. Add bell pepper, mushrooms, peas, onion, pineapple and cilantro to the skillet and stir-fry 5 minutes.

3. Reduce heat to medium. Add rice, chicken broth, and soy sauce. Stir-fry an additional 3 to 5 minutes.

4. Remove any remaining liquid, serve hot.

5. The Caribbean Fried Rice recipe makes 4 servings.

A scalding hot, properly seasoned wok is the tool of choice for fried rice preparation. Cooking without it can be done, but requires a very large non-stick skillet and some effort.

This Caribbean fried recipe is well suited for accompanying a jerk meat main dish. Jamaican jerk seasoning starts with Scotch Bonnet Peppers and Allspice, and can also include, cinnamon, nutmeg and garlic. The resulting dry rub gives pork, chicken, seafood some hot flavor. The meat or seafood is grilled over an open flame.
