Beef Fried Rice Recipe

Lean sirloin tossed in cornstarch, soy sauce, granulated sugar, and sherry, stir-fried with onion, long grain white rice, beef stock, and seasoned with sea salt.
Ingredients -
 

½ pound Lean Sirloin
1 tablespoon Cornstarch
1 tablespoon Soy Sauce
1 tablespoon Sherry
½ teaspoon Granulated Sugar
4 cup Long Grain White Rice, cooked and chilled
1 small White Onion, diced
5 tablespoon Peanut Oil
2 tablespoon Beef Stock
½ teaspoon Sea Salt

 
Preparation:
 

1. In a medium bowl, combine cornstarch, soy sauce, granulated sugar, and sherry.

2. Add beef to cornstarch mixture, toss to coat.

3. Heat wok over medium high heat.

4. Add 2 tablespoons oil and heat to near smoking point.

5. Add onion to hot oil. Stir-fry 2 minutes, or until translucent.

6. Add beef to wok. Stir-fry 3 minutes.

7. Remove beef and onions from wok. Set aside.

8. Heat remaining oil.

9. Add cooked white rice and stir-fry to heat through.

10. Add stock to wok. Stir in with rice.

11. Season with salt.

12. Return beef and onions to wok. Heat through.

13. Serve hot.

Fried Rice Tips -
Lean Sirloin

Lean sirloin can be substituted for other lean cuts of beef. Make sure beef is trimmed of fat and finely diced.


Fried Rice Tips -
Wok Cooking

For the best fried rice use a wok and very high heat. Seasoned carbon steel woks work the best. Add the peanut oil to the wok and bring it to smoking point. If the wok and oil are not hot enough the rice will stick together.
