Beef Fried Rice

Quick, spicy beef fried rice. Sirloin in soy sauce, sesame oil and red pepper flakes, stir fried with watercress, green onions and egg. Beef mixture is stir fried with Chinese long-grain white rice, that's been cooked and chilled, preferably overnight.
Ingredients -
 

¾ pound Sirloin, cut into bite size pieces
3 tablespoons plus 1 teaspoon Soy Sauce
2 teaspoons Sesame Oil
¾ teaspoon Dried Red Pepper Flakes
1 1/2 cups Long-Grain White Rice, cooked
1 bunch Watercress, tough stems removed
1 Egg, beaten
3 tablespoons Peanut Oil
2 Green Onions, including green tops, chopped

 
Preparation:
 

1. Combine sirloin with 1-tablespoon soy sauce, ½ teaspoon red pepper flakes, and 1-teaspoon sesame oil in a medium bowl.

2. Heat wok over medium high heat. Add beef mixture. Stir-fry 2 minutes. Remove from wok.

3. Wipe wok clean.

4. Add 1-teaspoon soy sauce and watercress to wok. Stir-fry until 30 seconds. Remove from wok.

5. Reduce heat to medium.

6. Add a few drops of sesame oil to wok. Add egg to wok. Stir-fry 30 seconds, or until cooked.

7. Remove egg from wok, and cut into strips.

8. Add peanut oil to wok.

9. Add green onions and 1/8-teaspoon red pepper flakes. Stir-fry 1 minute.

10. Add rice to wok. Stir-fry 3 minutes to cook through.

11. Add the remaining soy sauce, sirloin, watercress, and egg.

12. Stir-fry 2 minutes.

13. Drizzle the remaining sesame oil over beef fried rice.

14. Serve hot.

Fried Rice Tips -
Watercress

This leafy vegetable is high in minerals and nutrients. It's peppery taste makes it great in soups and salads. Arugula is a good substitute for watercress. Remove tough stems.


Fried Rice Tips -
Sirloin

Partially freeze the sirloin to make it easier to cut into thin strips. Slice the sirloin against the grain, with a very sharp knife. If you substitute with a tougher cut of beef than sirloin, add 3 tablespoons sherry to the soy and sesame oil and allow the beef to marinate in the soy and sherry mixture for 30 minutes.


Fried Rice Tips -
Tender Beef

Make sure the oil is hot. And stir-fry only 2 minutes or until the pink is gone. The beef is done. Remove from wok. It will continue cooking internally, and will be much more tender than if it is left in the wok for a longer period of time.
