Bacon fried rice is a great dish for brunch. The dish is also well suited for accompanying seafood, as it has a nice salty flavor that goes well with fish and seafood.
Ingredients -
3/4 pounds Bacon
3 Eggs
4 tablespoons Peanut Oil (vegetable oil will work)
4 tablespoons Soy Sauce
4 cups cold Cooked Rice
1/2 teaspoon Salt
1/2 cup Scallions, chopped
Preparation:
1. Fry bacon until crispy. Crumble or cut into small pieces. Set aside. Bacon can be diced before frying.
2. Carefully crack eggs into a small bowl, and beat well.
3. In skillet or wok, add small amount of oil and scramble eggs. Remove from pan or wok.
4. Insure wok is at high heat, add 3 tablespoons oil to wok. Allow oil to heat thoroughly but do not allow to burn.
5. Add rice and soy sauce to wok. Stir constantly to blend and heat thoroughly, no more than a few minutes.
6. Add salt, scallions, and bacon. Blend in ingredients to heat through.
Makes 4 servings of Bacon Fried Rice.

Peanut Oil
Peanut oil is a preferred oil for stir-frying because of its high smoke point, or ability to be heated to a high temperature at less risk of burning. Vegetable or canola oil can be substituted,
but both are much less desirable.

Just as cooking with peanut oil is desirable, having your cooking vessel, whether a large skillet or wok, as hot as possible without burning the oil, will make for a much better finished
dish.

When preparing rice, use a little less water than you would to make rice that's drier and more suited to stir-frying.
