Boil water in a saucepan. Lower vegetables into water (preferably in a wire basket). Cover pan. Make sure heat stays as high as possible, and begin tracking blanching time. Cook vegetables
for the time required.
Fresh Peas- 2 minutes
Frozen Peas - 5 minutes
Pea Pods - 3 minutes
Remove vegetables from boiling water and plunge into ice water for an equal period of time. |
